This pairing was selected by our Certified Tea Master. A sublime not-too-dark, not-too-sweet pairing for Matcha Kotobuki. It has a good amount of sweetness lift the grassy notes without overwhelming. The umami notes brought out a richness to melt-in-the-mouth chocolate, almost tasting like barley. The cacao had notes of tropical fruit, particularly banana, which becomes a welcome complement.

Matcha Kotobuki is produced from the highest quality Tencha that is slowly stone ground into powder in Uji, Kyoto. The tea is made of tender spring leaf, grown and harvested along the Kirishima volcanic mountain range of Kagoshima.

Solomon Islands Dark 76% is a bean-to-bar chocolate produced by Ratio Cocoa Roasters, Brunswick, Melbourne. The bar showcases a perfect balance of Amelonado and Trinitario varietals, box fermented for seven days then dried in a solar dryer. The Solomon Islands beans are sourced from the Island of Guadalcanal and have bold flavours with hints of spice and vanilla.
